Today I want to share with you 3 summer recipes that will make you fall in love with saffron. Pasta salad with saffron and cherry tomatoes

Pasta salad is a timeless summer classic. We add a touch of saffron to make it even more special. Here’s what you need to prepare it:

Ingredients (for 4 people):

320 g of short pasta (penne, farfalle, fusilli, etc.)
A pinch of saffron pistils
500 g of Pachino cherry tomatoes
A handful of black olives
Fresh basil
Extra virgin olive oil
Salt to taste.
Pepper as needed.


Start with the saffron sauce: dissolve the saffron in a little hot water, leaving it to infuse for at least 30 minutes. Meanwhile, cook the pasta in salted water following the instructions on the package. Cut the cherry tomatoes and black olives in half.
Drain the pasta al dente and cool it under cold water.
In a large bowl, combine the cold pasta, cherry tomatoes, black olives, chopped fresh basil, saffron sauce, extra virgin olive oil, salt and pepper.
Gently mix until all ingredients are well distributed.
Leave to rest in the refrigerator for at least 1 hour.
Serve cold and enjoy a fresh and tasty pasta!


Chicken skewers with Curry and Saffron

The saffron curry chicken skewers are perfect for a summer barbecue. Here’s how to prepare them:


500 g chicken breast
2 teaspoons curry powder
A pinch of saffron pistils
Lemon juice
Extra virgin olive oil
Salt to taste.
Pepper as needed.
Vegetables of your choice for the kebabs (peppers, onions, courgettes, etc.)


Cut the chicken breast into cubes and place them in a bowl. Add the curry, saffron, lemon juice, extra virgin olive oil, salt and pepper. Mix well so that the chicken is flavored. Cover the bowl and leave to marinate in the refrigerator for at least 1 hour.
Prepare the skewers by alternating pieces of marinated chicken and vegetables of your choice.
Cook the kebabs on the grill or hot plate until the chicken is cooked through.

Saffron and ginger ice cream

How about a fresh and fragrant ice cream? This recipe combines saffron with a slightly spicy touch of ginger. Here’s what you need to prepare it:


500 ml of fresh cream
200 ml of whole milk
200 g of sugar
3 egg yolks
Saffron pistils to taste
Fresh grated ginger to taste


In a saucepan, combine the cream, milk and saffron. Heat the mixture over medium heat, stirring gently, until it begins to boil.
In a separate bowl, beat the egg yolks with the sugar until smooth.
Gradually add the hot cream mixture to the yolks, stirring constantly. Return everything to the pot and cook over medium-low heat, stirring constantly, until the cream thickens slightly.
Remove from heat and let cool completely.
Add the grated ginger into the cream and mix well.
Pour the mixture into the ice cream maker and follow the instructions.
