While I was looking for inspiration for new dishes to offer you, I came across several recipes in which saffron was combined with chicken meat.
Chicken is one of the most popular white meats and, thanks to its delicate taste, lends itself well to being flavored in different ways. This recipe for saffron chicken nuggets is my personal interpretation of the combination of chicken and saffron. It is a simple and quick recipe to prepare, just remember to infuse the saffron in time. The appearance may recall that of chicken curry, but the taste is much more delicate and will appeal to the whole family, children included!
SAFFRON CHICKEN NUGGETS
INGREDIENTS (serves 4)
2 chicken breasts
200 ml cooking cream
1 cup vegetable broth
Half a teaspoon saffron threads
1 tablespoon butter
Flour to taste
Extra virgin oil to taste
Salt and pepper to taste
In a small cup, infuse the saffron threads with 3 tablespoons hot broth. Cover the cup with a saucer (so that the aroma does not disperse) and leave to infuse for about 40 minutes.
Cut the chicken breasts into bite-sized pieces. Put a little flour on a plate, roll the nuggets into the plate and shake them to remove excess flour.
In a large pan, melt the butter with 2 tablespoons oil, then add the nuggets and brown them well on all sides, until they are golden and cooked.
Salt and pepper to taste, then lower the heat and add the broth with the saffron. Add also about half a cup of vegetable broth and let the sauce dry a little. Finally add the cream, mix well and season again with salt and pepper. Let it cook for a few minutes then serve the chicken nuggets while still hot.
You can serve these saffron chicken nuggets with your favorite side dish. You can also serve them with basmati rice and your favorite vegetables.
