Saffron in threads or powder? Here’s why you should always choose threads!
When it comes to saffron, we often find ourselves faced with a choice: is it better to use threads or powder? If you’ve asked yourself this question at least once, you’re in the right place. In this article, we’ll explain the real differences between saffron in pistils and powder, and above all why – in our opinion at Zafferano Emiliano – it’s always worth choosing saffron threads, especially if it’s Italian and organic.
Let’s start with the basics: what is saffron?
Saffron is a prized spice obtained from the stigmas of the Crocus Sativus flower. Each flower produces only three pistils, which are picked by hand, one by one, in the early hours of the morning. To obtain just one gram of saffron, about 150 flowers are needed! This is the main reason why saffron has a high price and is called “red gold”.
Once collected, the pistils are dried to preserve them over time and concentrate their scent, color and aroma. And this is where the first big difference between the two forms in which we can buy it comes from: pistils and possibly powder.
The differences between saffron threads and saffron powder
1. Processing
Saffron in pistils is the purest form. It is simply the dried product, without further processing.
Saffron in powder, on the other hand, is obtained by grinding the pistils. Too bad that in many cases it is not just saffron: it can contain starches, colorants, turmeric or even paprika. The risk of counterfeiting or low-quality mixtures is high, especially in low-cost products and of uncontrolled origin. I had already talked about it in this article on the blog, if you haven’t already done, hurry up and read it!
2. Conservation
The threads maintain their properties intact for longer, even up to 5 years if well preserved. Remember to store your saffron in a cool, dry place, away from humidity, light, and heat sources.
Powder, on the other hand, tends to quickly lose intensity and aroma. This is because, being already ground, it is more exposed to oxidation and light.
3. Aroma, taste, and color
With pistils, the release of aromatic substances is gradual and profound. The color is more intense, the aroma more persistent, and the flavor… is something else entirely.
Powder, if of low or mixed quality, risks having a barely noticeable aroma and an almost neutral taste.
Why is saffron in threads the best choice?
Now that you understand the difference, let’s get to the heart of the matter: why is it worth choosing saffron in pistils?
- It’s purer
With pistils, you see what you’re buying. There are no tricks: no additives, no suspicious powders. If the color is uniform, the scent is intense and the filaments are well preserved, you can rest assured: it is real saffron. - It is more effective in the kitchen
Using pistils is a simple but highly valuable gesture. Just soak them in hot water (or broth, milk, wine) for at least 30-40 minutes before using them. This allows the flower to slowly release all its properties. The liquid thus obtained is pure gold for your recipes: perfect for risottos, pasta, desserts and even cocktails. - It lasts longer
It may seem more expensive, but saffron in pistils is very concentrated. A small amount is enough to flavor a dish for 4 people. For the same weight, the flavoring power of the pistils is significantly superior to industrial powder.
An extra precaution: choose Italian organic saffron.
And here comes the point that is closest to our hearts: the origin.
Choosing Italian saffron means enhancing a product grown with care, according to traditional methods, without the use of pesticides or chemical fertilizers. At Zafferano Emiliano, for example, we grow saffron by hand, following the seasons and respecting the land. Ours is a certified organic saffron, grown in Emilia-Romagna, in a healthy and natural environment.
When you choose a product like this, you are not just buying a spice: you are bringing a story to the table, made of passion, territory and quality.
What if I have little time?
It happens to everyone to be in a hurry, but we assure you that hydrating the pistils does not require much effort. You can leave them to soak while you prepare the other ingredients: it is a small gesture that makes the difference in the dish. And if you are really in a hurry, you can break your saffron pistils in a mortar or with a meat tenderizer, so as to obtain a powder: in this case the recommended infusion time is reduced to 10 minutes! In this video on my YouTube channel you will find all the secrets on how to use saffron in pistils.
And let’s face it: in the kitchen, as in life, good things take time. And saffron is one of those little daily luxuries that is worth enjoying to the full.
